Brownie Bites? For breakfast? I don’t know if your kids have acquired a bag full of candy this week (translation: there’s a bag of candy I have devoured), so fixin’ that sweet tooth first thing in the morning is the best thing that could happen to my hips. So without further a-do…Let’s eat brownies for breakfast! I found the original recipe at runningwithspoons.com, and my take is pretty similar. Hers is classified as vegan, though, if that’s what your into!
- 1/3 cup rolled oats
- 2 Tbsp. flour
- 1 Tbsp. unsweetened cocoa powder
- 1/4 tsp. baking powder
- pinch salt
- 1/3 cup milk
- +/-1 Tbsp. maple syrup (to taste)
- 1 tsp. coconut oil
- 1/2 tsp. vanilla
- 2 Tbsp. chocolate chips
Pre-heat oven to 340 degrees. Spray or lightly grease an oven safe bowl.
Mix first five ingredients (all dry except choc. chips) in a medium-sized bowl. Or a huge bowl if you just want to be like me!
And yes…I’m a very messy baker.
Allow to cool for about five minutes, then take a fork and chunk it up and add a few extra chocolate chips, or sauce of some sort (like chocolate) if you want.
Super Easy!! Now, let me tell you. I doubled the batch. Partly because I knew I was going to gobble this down (usually I skip breakfast…I know…I know!). The other part was that I forgot to put baking powder in the first batch, so I just made a second batch and added both batches worth and put it all together. Be sure to visit runningwithspoons.com! I love her site! This particular recipe is vegan (?) so she used almond milk and dairy free chocolate chips. I’m also thinking the maple syrup could be exchanged for honey, but I like maple flavored oatmeal and liked the taste in this, too.
About the sour patch grapes…I originally saw this at dinnerthendessert.com and that’s where you should look, too! Hers turned out way prettier than mine, anyway, plus my camera has decided that it hates my computer! All that I have to add to her recipe is that generic flavor lemon jello from Wal-Mart was our crowd favorite!!
